Our ChefFrom the early age of 10, when his mother taught him to make sauce béchamel, Grant Carey was interested in cooking. But it was during his first year of college—while pursuing a multimedia degree at Bradley University—that he realized gastronomy was his true calling. After spending more time reading cookbooks than textbooks, he decided to transfer to the Culinary Arts program at Kendall College. Since earning his degree he has worked in everything from three-star fine dining establishments to private clubs and resorts. Today, Grant strives to incorporate the freshest seasonal ingredients from Illinois, Wisconsin, Indiana and Michigan to elevate the regional American cooking of Smylie Brothers Brewing Co. |
